Green bean salad with mayo, ham, sausage and cheese

Our “Empty the fridge” challenge continues despite the fact that I already break the rules. We were shopping the other day for some very basic items…  Anyway I decided to take a look in the freezer and see what I can mix together in what way to call it dinner for tonight.  But enough with the story..

Here are the ingredients.

500g frozen green beans
4 cloves of garlic, minced
80g chorizzo sausage, cut in tiny pieces
70g mayonaisse
2 tablespoons ful fat greek yogurt
20g sun dried tomato, cut in tiny pieces
85g cured chees, shredded
70g ham (jamon cocido), cut in tiny pieces
1 tablespoon of fat
Salt to taste
Fresh basil leaves, a handful, chopped to bits

I quickly boiled the frozen green beans with a little bit of salt until “al dante” (ideally I would have steamed it, but I don’t have a steamer here). Removed the beans from the water and let it cool down. Dropped the sausage bits in hot oil, let it sizzle just a little bit, and took it out with about 1 tablespoon of fat from the pan (it was fat I cooked in the morning with).  Added all the ingredients in a big bowl ,mixed well, and let it stay in the fridge for about half an hour.

Serves about 3; (or 4 smaller portions)
