1kg chicken breast
80g peanut butter
200ml heavy cream
40g (2 tablespoons) of duck fat (or other fat – olive oil, butter)
parsley, salt, smoked paprika, pepper to taste
Super easy and fast. Use a large pan (I often use the wok), add the fat and the chopped onion to medium heat, fry it for a few minutes, add the chicken breast cut to strips. Once white, added the salt, pepper, parsley (dried) and smoked paprika, the peanut butter and mixed it a few times. Added the heavy cream, mixed it again and let it simmer for about 7-10 minutes, until the liquid mostly evaporated. Served it with boiled broccoli.
Although the peanut butter carb content is fairly high, overall in the whole amount of food was not to bad.
